Tapioca Pudding with Caramelized Peaches and Amaretti

Just as the lazy summer days are passing by, I'm enjoying quick and fruty desserts more and more.My relationship with tapioca pearls wasn't a happy one until I tried this recipe. In fact the bag of tapioca pearls was sitting in my dispensa way too long (I had only tried using them once with much less than satisfying result) and I'm more than happy I've found a perfect way to use it.Everything
